Mushroom Crepes

These mushroom crepes are a delicious savoury crepes idea. Thin and delicate crepes filled with flavourful gourmet mushrooms, onions, garlic, spinach, and cheese.


12 (6 in) crepes

3 tbsp extra virgin olive oil

1 1/4 lb (approx 560 g) mushrooms (cleaned , trimmed, and sliced)

1/4 cup flat-leaf parsley, chopped

1 tbsp thyme leaves

1 garlic clove, chopped

Salt and Pepper

1 package spinach, washed, stemmed, and chopped

5 oz goat cheese, crumbled

2 cups mozzarella cheese, shredded

Gruyère cheese


1. Preheat your oven to 350 F

2. Heat the oil in a pan over medium heat. Saute the mushroom with a pinch of salt.

3. Then you can stir in the parsley, thyme, and garlic, and season it with salt and pepper. Allow it to cook.

4. After 2 min, lower the heat and add the spinach. Cover and allow it to cook.

5. You can now add in the goat cheese, and mozzarella cheese until it melts to make the filling.

6. To prepare the crepe, lay it on a chopping board. Put some of the filling and roll it.

7. Just repeat the process with the remaining crepes.

8. Place them in a greased casserole dish and cover it with foil. Cook them in the oven for 16 min.

9. Best served warm with sour cream.
