Mushroom Mousse

Get ready for a dessert experience like no other with this mushroom mousse with Caramelized Ivory enoki mushrooms! Indulge in the earthy flavours of gourmet oyster mushrooms beautifully blended into a creamy mousse, topped with caramelized mushroom perfection. Are there any chefs willing to help me with this unique culinary delight? I feel like we can put this on dessert menus.


1 cup ivory enoki mushrooms @threecfarms

2 tablespoons butter

2 tablespoons sugar

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

Chocolate shavings or cocoa powder, nuts and berries for garnish


Preparation :

1. Clean the mushrooms and separate them into small clusters. Remove any tough stems or debris.

2. In a skillet, melt the butter over medium heat. Add the mushrooms and sauté them until they turn golden brown and slightly crispy. Sprinkle the sugar over the mushrooms and continue cooking until the sugar caramelizes and coats the mushrooms. Remove from heat and set aside.

3. In a mixing bowl, whip the heavy cream using an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue whipping until stiff peaks form. Be careful not to over-whip.

4. Take half of the caramelized oyster mushrooms and finely chop them. Fold the chopped mushrooms into the whipped cream gently until well combined.

5. Divide the mushroom mousse evenly into serving glasses or bowls. Top each serving with a few spoonfuls of the remaining caramelized oyster mushrooms.

6. Optionally, garnish with chocolate shavings or a dusting of cocoa powder for added flavor and presentation.

8. Chill the dessert in the refrigerator for at least 2 hours to allow the flavours to meld together and the mousse to set.

10. Serve the Mushroom Mousse with Caramelized Oyster Mushrooms chilled and enjoy the unique combination of flavours and textures.
