Mushroom Bourguignon

Rich and flavourful vegan mushroom bourguignon, perfect for any night of the week. A creamy and hearty vegetarian dish, with all the aspects of a supreme comfort food. This recipe is naturally gluten-free, dairy-free, and easy to make.


Ingredients:

Fresh sliced mushrooms- mixed combo of snow oysters & black pearl @threecfarms

1 tbsp olive oil @getkristinas

1/2 large onion diced

2 medium carrots chopped

2/3 cup peas frozen

3 garlic cloves minced

3/4 tbsp fresh thyme

1 tsp garlic powder

3/4 tsp sea salt

1/4 tsp black pepper

1/4 tsp smoked paprika

1/3 cup red wine

1 cup vegetable broth

1/4 cup almond milk

3/4 tbsp cornstarch
